A Collector's Score is the sum of all the tattoos, trophies, and familiars that a player has obtained, collected, and unlocked. This information is available in the other accomplishments section of your Quest Log.
There are currently 125 tattoos, 132 familiars (not including the Reassembled Blackbird), and 93 trophies, making for a maximum score of 350, not including custom tattoos or undiscovered trophies.
