Powerful enemies that you only defeat under specific circumstances. Many can only be beaten once per ascension, but some (most notably those found in Clan Dungeons) have other methods of respawning.

Bosses have no stat variance.

Bosses cannot be killed instantly by an item under all but the rarest circumstances. They are also uncopyable. Fighting them will also disable your auto-attack, so don't worry about accidentally losing the fight if you have one selected.

In general, defeating a boss with a Knob Goblin Organ Grinder out counts towards making badass pies. There are some exceptions though.
